If you love BBQ, then you’re going to LOVE Caldwell County BBQ. We take great pride and care in preparing our simple back-to-basics Texas-style BBQ. Our meat is 100% wood-smoked, fueled with a mixture of mesquite and pecan—no gas, no electricity—in Max Woodruff. No, that is not a typo. We didn’t mean “by” Max Woodruff, we actually named one of our monster homemade smokers. You can read all about it here in The Birth of Max Woodruff .

Why are we offering Texas-style barbecue in Gilbert, Arizona? Honestly, it is incomparable to most BBQ styles offered anywhere in the USA. All around the United States “low and slow” has become the slogan. Low heat and slow timing have become a favorite for creating juicy tenderness and natural smoke flavor.
